Coq Au Vin Recipe
My take on the classic French dish.
One whole chicken, preferably Amish, skinned, defatted, butterflied, salted and peppered
One sprig of rosemary
Four sprigs of thyme
Six cloves of garlic, chopped fine
15-20 peeled pearl onions
One small white onion, chopped fine
3 medium carrots, peeled, halved and cut on the bias
